PROFESSIONAL COOKING

Course designed to obtain an intensive training and an excellent educational trajectory that will allow you, in 1 year, to acquire the technical knowledge and the necessary skills to become a professional of the gastronomy.

Who is it aimed At?
People between 25 and 37 years who want to be part of the current gastronomic scenario from the quality patterns designed by Hofmann School and have created our identity.
Duration: 12 months from April to March
Programming
1st CYCLE: CULINARY TECHNIQUE
Duration: 3 months 4 days a week of theoretical and practical training given by our team of professors in the facilities of the Hofmann School in the district of El Born.
1 weekly session demonstration of culinary technique. Monday from 9am to 13h
1 weekly session of culinary culture classes. Tuesday from 10am to 13h
2 Practical Weekly sessions. Wednesdays and Thursdays from 9am to 2pm
Demonstrative Classes The Objective of these classes is to deepen the knowledge of the product, its characteristics, properties and manipulation as well as the different techniques and its correct application.

Practical Classes
After the demonstrative classes, the students must put into practice the concepts and techniques learned in the demonstration class. Through these classes the knowledge acquired in a classroom of professional cooking practices will be consolidated.
Theoretical Classes of gastronomic culture
During these sessions, training will be carried out in different areas:
-Hygiene and food handling. Obtaining the food handler card.
-Winemaking and wine pairing.
-Basic Knowledge of dietetics and nutrition. Tools to design a balanced proposal.
2nd CYCLE: PROFESSIONAL INTERNSHIPS (I) Duration: 4 months (700 hours of internships)
Professional Mediterranean and market cuisine Practices at the Taverna Hofmann Restaurant.

3rd CYCLE: PROFESSIONAL PRACTICES (II) Duration: 4 months (700 hours of practice + 43 theoretical hours of quality and kitchen management)
Stage in gastronomic establishments selected according to the quality criteria of the Hofmann School.
